Classic lasagna – 5 layers. We start with beef fat and add garlic, then salt. Next, when its ready, we add balsamic vinegar and a smidge of sugar. Next comes crushed tomato and onion. we take time here to develop the base so that it’s sticky, rich and brown. Sweet and never burnt. We add lean ground chuck to this and let it do it’s thing. Cottage cheese, basil and fresh spinach sit between 2 generous layers of these beef blankets while swimming in lots of full fat mozzarella, Our house tomato sauce, and a touch of heavy cream. Each one of these is made by hand in small batches. Easily satisfies 2 adults on its own, or 3 if you bring a side. – Butternut squash soup perhaps?
